5 oz Baby Spinach (about 5 cups)
1 can White Beans rinsed
1 Red Bell Pepper diced
2-3 Sliced Mushrooms
1/2 cup Shredded Parmesan Cheese
Balsamic Vinaigrette (recipe below)
Toss spinach with all ingredients then drizzle with vinaigrette and serve
Balsamic Vinaigrette
5 TB Olive Oil
2 TB Water
2 TB Balsamic Vinegar
1 tsp Dijon Mustard
1 tsp Minced Onion
1 Garlic Clove
1/2 tsp Honey
1/4 tsp Dried Oregano
1/8 tsp Salt
1/4 tsp Pepper
Thoroughly whisk all ingredients together until completely emulsified.
